No-Cook Berry Oatmeal

Ingredients:

  • 1/2 cup steel cut oatmeal
    • Option 2: Rolled oats
    • Option 3: Quick-cooking oats (instant oatmeal)
  • 1/2 cup blueberries (frozen or fresh) or other berries (frozen or fresh: strawberries cut into small pieces, raspberries, frozen cranberries, etc.)
  • 1/2 cup plant-based milk
  • 1/2 cup water
  • 1 tablespoon chia seeds
  • 1/4 tablespoon spice to taste: turmeric, cinnamon, carob, or chocolate

Instructions:

  • Mix everything in a medium Mason jar (or a plastic container with a lid)
  • Re-mix and check that no solid deposit has formed at the bottom of the jar
  • Refrigerate overnight

Instant Pot Oatmeal

Ingredients

  • 3 apples cut into small pieces with the skin
  • 3 cups rolled oats
  • 4 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • 2 cups coconut milk
  • 4 cups plant-based milk & water
  • 1 cup walnuts
  • 1 cup dried fruits (raisins, goji berries, etc.)

Preparation

  • Mix everything in the Instant Pot
  • Slow cook for 8 hours in the Instant Pot

Notes

  • This makes a large quantity, roughly enough for 12 breakfasts.
    • Divide the quantity by three to try it out

Variations

  • The apples can be replaced with pears/peaches/apricots/etc. (not too ripe)

Chia Pudding with Coconut Milk

Ingredients:

  • 250 ml (1 cup) coconut milk
  • 2 tbsp (20 g) white or black chia seeds (no need to grind them)
  • 2 tbsp maple syrup (or sugar)

Preparation:

The night before, in a large 500 ml (2 cups) Mason jar or a sealable airtight container:

  • Mix the coconut milk, chia seeds, and maple syrup.
  • Stir well
  • Close the jar and place in the refrigerator overnight
    • If possible: stir by shaking the jar after 1 hour so the pudding is nice and smooth
