Ingredients:

  • One cauliflower
  • 3 cloves of garlic (optional)
  • 100g pine nuts
  • Spices: chives, cilantro or basil, your choice
  • Salt
  • Pepper

Preparation:

  • Clean the cauliflower
  • Preheat the oven to 200°C
  • Cut the cauliflower into small pieces in an oven-safe dish
  • Boil the whole garlic cloves with their skin for 15 seconds
  • Peel them and cut lengthwise
  • Place them with the cauliflower and drizzle everything with olive oil
  • Bake for 30 minutes
  • Warm the pine nuts in a pan for 5 minutes
  • In a bowl, combine the cauliflower, pine nuts, fresh herbs, lemon juice, olive oil, salt and pepper
  • Serve immediately (delicious warm!)

Note: For an oil-free version, replace the oil with vegetable broth
