Celine’s Cauliflower Salad

Ingredients:#
- One cauliflower
- 3 cloves of garlic (optional)
- 100g pine nuts
- Spices: chives, cilantro or basil, your choice
- Salt
- Pepper
Preparation:#
- Clean the cauliflower
- Preheat the oven to 200°C
- Cut the cauliflower into small pieces in an oven-safe dish
- Boil the whole garlic cloves with their skin for 15 seconds
- Peel them and cut lengthwise
- Place them with the cauliflower and drizzle everything with olive oil
- Bake for 30 minutes
- Warm the pine nuts in a pan for 5 minutes
- In a bowl, combine the cauliflower, pine nuts, fresh herbs, lemon juice, olive oil, salt and pepper
- Serve immediately (delicious warm!)
Note: For an oil-free version, replace the oil with vegetable broth
