Chocolate-Dipped Orange Peels
Ingredients#
- 6 organic oranges (untreated)
- 250g sugar
- 1 half glass of water
- 500g baking chocolate
- Orange blossom water (optional)
1 - Prepare the oranges#
Boil the peels cut into quarters in water for one hour to blanch them.
Drain the peels for at least 12 hours until they are dry to the touch.
2 - Prepare the syrup#
Make a syrup with 250g of sugar and half a glass of water.
3 - Cook the orange strips in the syrup#
Cut into thin strips.
Cook them gently in the syrup, until all the syrup is absorbed.
4 - Dry the orange strips#
Remove them and, while still warm, place them on parchment paper.
Let dry for a few hours. Note: If they don’t dry fast enough, put them briefly in a low oven.
5 - Chocolate coating#
Melt 500g of baking chocolate in a double boiler.
Put two or three orange pieces in the chocolate with a fork, coat them and place them on parchment paper, and continue until you run out of peels and/or energy.
6 (optional) - Orange flesh#
Cut the peeled oranges into rounds.
Sweeten them, add orange blossom water.
Goes very well with chocolate mousse or makes a lovely base for a fruit salad.
